A Few of My Favorite Things

I have had a few obsessions recently. My first one is a little sad. Unfortunately the other day while my boyfriend was mowing the lawn, he ran over a nest of baby rabbits. We were both mortified and I actually ended up taking one to a veterinarian who specializes in wildlife and they said they would be able to rehabilitate the poor guy and he would be able to stay in a wildlife sanctuary here in Kentucky. So, ever since then, I have been completely obsessed with the other two babies that survived (based on my research, I estimated them to be about 3 weeks old, almost old enough to be out on their own), and their mother. I had been keeping my eye on them for awhile, but they never went back to their nest. I did, however, see a very happy reunion between them and momma rabbit, which made me very happy.

My other obsessions are more health related, and not quite so sad. First, ever since I started my first Summer Shred with Bobbi McCormick, I have been obsessed with putting my chocolate vegan protein powder into plain Chobani Greek yogurt along with some sliced strawberries and granola (for an awesome post-workout or evening snack). If you haven’t tried this before, you really should because its pretty amazing. It beats the pre-sweetened yogurts any day of the week for me and definitely helps with my sweet tooth!

I am also deeply obsessed with oatmeal. I have been eating it just about every morning and would eat it 2-3 times a day if I could. I love mixing half steel-cut oats with half rolled-oats. Something about it gives the perfect consistency for me. I used to not be able to eat oatmeal unless it was made with milk or almond milk, but now I have even figured out how to love it using water, which is awesome because water is free and almond milk is not cheap! I think their is something about a bowl of oatmeal that is just so comforting and relaxing. Its really making me want some now! The best part though is coming up with all kinds of different toppings for it. My favorite is fresh apples and raw almonds. Very tasty.

Also, I think I’m becoming obsessed with working out and going to fitness classes. I literally did 3 classes in a row the other day and plan on doing the same tomorrow. I just feel so good when I’m exercising lately and feel so good afterwards. Plus, I’m seeing some real improvement in my physical appearance and fitness level. I feel stronger and am starting to feel more confident as well.

My skin also seems to be starting to clear up (knock on wood, because I know as soon as I say it, I will break out all over again), which I also attribute to eating clean. I’m just feeling good all around, and to top it all off I have several exciting trips coming up (to St. Louis to see my favorite MLB team the Cardinals play at their home stadium, to Nashville for a bachelorette party for one of my best friends, to Atlanta to visit one of my favorite cousins, and then to Florida in August)! Its going to be a busy and exciting summer for sure!
